How to make healthier toad-in-the-hole

Toad-in-the-hole is the ultimate comfort food for Autumn – warm, hearty and filling. You might think that toad-in-the-hole can’t fit into a healthy diet, but you would be wrong! With just a few easy tweaks, we’ve created a toad-in-the-hole recipe that’s healthy, tasty and packed with protein.

 

Ingredients

  • Frylight spray 
  • 100g red onion 
  • 8 reduced fat sausages/chicken sausages/vegetarian sausages 
  • 2 eggs 
  • 250ml skimmed milk 
  • 100g plain flour 
  • ½ tsp dried thyme 

Method

  1. Preheat the oven to 200 C. 
  2. Coat the bottom of a tray with Frylight.
  3. Thickly slice the onion and place in the tray, making sure to separate the layers. 
  4. Place sausages on top of the onion. 
  5. Cook in the oven for 10-15 minutes. 
  6. Meanwhile, prepare the batter. In a bowl, whisk together the eggs and milk. In a separate bowl, weigh out the flour and gradually add the wet ingredients. Whisk until smooth. 
  7. Once the batter is smooth, mix in the dried thyme. 
  8. Remove the tray from the oven and add the batter immediately. Place back in the oven and bake for 30 minutes. 
  9. Enjoy!
