Try our healthy ice-cream recipe with coconut and strawberry

Keep it fresh and fruity with our healthy ice-cream recipe that combines two iconic summer treats – strawberry and coconut.  

Ice-cream is the perfect way to beat the heat on warm, sunny days – and is just as tasty while you’re cosy on the sofa during the winter months! But ice-cream is often full of sugar and high in fat, making it an unhealthy treat that should be enjoyed occasionally.  

That’s where our tasty recipe comes in. It’s full of natural ingredients like strawberries, honey and coconut milk, that keep the calories down but the taste levels high.  

And because it contains zero dairy, it’s suitable for vegans and those with lactose intolerances too. 

Whether you like the crunch of a cone or prefer a mess-free bowl and spoon, there’s only one real question – one scoop or two? 


  • 1 can of full-fat coconut milk 
  • 3 teaspoons of honey 
  • 1 teaspoon of vanilla essence 
  • A handful of fresh strawberries 

Fancy a different fruit? 

Strawberries aren’t the only dream companion for coconut milk. Get tropical by using mango or peach instead – or swap out one berry for another with raspberries or blackberries. 


  1. Add the coconut milk, honey and vanilla essence to a bowl and mix 
  2. Pour the mixture into ice cube trays and freeze them for four hours 
  3. Once frozen, add the cubes into a food processor with two handfuls of chopped strawberries 
  4. Blitz until smooth (stir occasionally) 
  5. Serve your ice-cream immediately as a soft serve – or refreeze the mix for a harder consistency 

This healthy ice-cream recipe is fun for the whole family to get involved in, with simple steps for the littlest of hands. And because it swaps sugar for honey and dairy for coconut milk, you can enjoy everyone’s favourite guilty pleasure completely guilt-free!
