Brilliant banana pancakes

When you picture pancakes, you probably think of towering stacks smothered in chocolate or sprinkled with sugar.  

But did you know there are healthier ways to enjoy these tasty treats? 

The key is making a low-calorie batter – and choosing sugar-free toppings like berries, fat-free yoghurt or drizzles of honey.  

Ingredients:

  • 1 banana 
  • 2 eggs 
  • ½ tsp baking powder 
  • 4 tbsp rolled oats (or save time by using original Ready Brek!) 
  • ½ tsp cinnamon 
  • Cooking oil spray  

Optional Toppings:

Is a pancake a pancake if it doesn’t have toppings? We don’t think so! 

Swap ice-cream, chocolate and sugar for healthy alternatives like: 

  • Blueberries, raspberries and strawberries – or add more banana! 
  • Flaked almonds, sunflower seeds or chopped hazelnuts 
  • Honey, maple syrup or Greek yoghurt 

Method:

  1. Mash the banana into a thick puree using a fork 
  2. Stir the rest of the ingredients into the banana mixture – for an extra smooth batter, blitz it in the blender 
  3. Heat a non-stick frying pan over a medium heat and spray with some cooking oil 
  4. Spoon some pancake mix into the pan and cook for 1-2 minutes on each side. Don’t forget to flip it over!  
  5. Tip it onto a plate once done, then repeat the process with the remaining batter

This recipe makes 6 pancakes.

  • Energy 44kcal 
  • Fat 0.6g 
  • Saturated fat 0.1g 
  • Sugar 3.6g 
  • Salt 0.1g
